Strawberry Pie

When I was growing up there was a restaurant called Baker's Square that had a vast selection of pies. The Strawberry Pie was a favorite. Sadly, they closed, and I had to figure out how to make my own version. Enjoy!

1 Refrigerated Pie Crust
2 cups Sliced Strawberries
2 Tbsp Cornstarch
1 cup Sugar
1 1/2 cup Water
1 3oz Box of Strawberry Gelatin

Preheat oven to 350 degrees. Place the pie crust in a 9 inch pie pan and crimp the edges. Using a fork, prick the bottom and sides of the dough. Bake the crust for about 15 minutes, or until the edges are golden brown. Set aside to cool.

Once the pie crust has cooled, layer in the strawberries. In a medium saucepan stir together the water, sugar and cornstarch. Bring the mixture to a boil. Reduce it to a simmer. Stirring the mixture constantly until it has thickened. Turn off the heat and add the strawberry gelatin. Stir until the gelatin has dissolved. Pour the mixture over the strawberries. Refrigerate until set, about 3 - 4 hours.

When serving feel free to add a dollop or two of whipped cream.

Serves about 8
